Built in 1831 in a fold of the Chiltern Hills as
a beer and cider house and formerly known as The
Rising Sun, this fashionable dining pub was
re-named after two latter day proprietors, Mr
Mole and Mr Chicken: of such stuff are legends
made. A tastefully decorated interior features
cosy fireplaces, rag-washed walls and flagstone
floors in the oak beamed bar, while the tiered
and terraced garden enjoys outstanding views
across three counties. Suggested menu
specialities, posted on boards over the
fireplace's oak lintel, include secret recipe
fishcakes with mild curry sauce and skewers of
satay chicken and shell-on prawns enticingly
entitled Horses Douvay. Follow then with
marinated and slow roast rack of pork ribs,
salmon filled with prawn and dill mousse in filo
pastry or penne pasta tossed in sun-dried tomato
pesto. Roast lamb shoulder with honey and
rosemary sauce and local pheasant with shallots,
red wine, bacon and sage provide further
variations on traditional themes.
